Sangria de Espumante
Quando se trata de marisco, o meu marido é que vai para a cozinha. E hoje foi um desses dias.
Eu só me ocupei da bebida.
Ingredientes:
1 laranja
2 maçãs
1 fatia de abacaxi
10 morangos
2 colheres de sopa de açúcar
1 pau de canela
1 cálice de aguardente
1 garrafa de espumante
Cerca de 200 ml de 7Up
Folhas de hortelã
Gelo
Algumas horas antes, partir as frutas, juntar o açúcar, o pau de canela e a aguardente. Misturar e guardar no frigorifico para a fruta macerar.
Antes de servir, juntar o espumante, o 7Up, a hortelã e o gelo.
Tchim, tchim!

Torta de Laranja
Sempre que vamos ao Algarve trazemos laranjas. E esta vez não foi excepção!
Como ainda tinha tantas laranjas, resolvi experimentar fazer torta de laranja, um doce que o meu marido adora e que eu nunca tinha feito. Aliás, eu nunca tinha feito uma torta. Esta é a minha primeira torta! E, modéstia à parte, até saiu muito bem!
Ingredientes:
200 ml de sumo de laranja
Raspa das cascas das laranjas
8 ovos
200g de açúcar + açúcar para enrolar a torta
1 colher de sopa de maizena
Aquecer o forno a 200°.
Untar um tabuleiro com margarina e forrá-lo com papel vegetal também untado com margarina.
Juntar todos os ingredientes (exceto o açúcar para enrolar a torta) e bater com a batedeira.
Deitar no tabuleiro e levar ao forno cerca de 30 min.
Com a torta ainda quente, desenformar em cima de um pano de cozinha polvilhado com açúcar e enrolar cuidadosamente.

Pão de Queijo
Eu adoro pão de queijo!
Faz-me lembrar os tempos em que eu era criança e ia com os meus pais ao Brasil.
Esta é a segunda vez que os faço, e já não me lembrava como é "chato" moldar as bolinhas de pão, porque a massa está sempre a pegar-se às mãos.
No fim fiz 34 pãezinhos de queijo, metade cozi e a outra metade guardei no congelador. Quando precisar é só pôr no forno (não é preciso descongelar).
Vamos precisar de:
500g de polvilho doce
300g de leite
80 g de óleo
4 ovos
100g de queijo da ilha ralado.
80g de queijo mozzarela ralado
1 pitada de sal
Colocar o leite, o óleo e o sal no copo da Bimby e programar 7 min., 90°, vel. 1.
Depois juntar o polvilho e amassar 20 seg. vel. 6.
Deixar arrefecer.
Depois juntar os os ovos e os queijos. Amassar 40 seg. vel. 6 e depois 1 min. vel. Espiga.
Com as mãos sempre com farinha moldar pequenas bolas.
Deixar descansar 20 min.
Aquecer o forno a 175°/180° e cozer durante 20 min.

Puff pastry topped with courgette and mushrooms
I'm starving!
I found this recipe in a book which I cannot remember now!
But it's still amazing!
You'll need puff pastry, tomato sauce, half a courgette and 6 mushrooms. I add just before serving ricota cheese on top. Hummm... Delicious!
Bake for 15 minutes, in 180°.

Coconut milk and coconut butter
It's been a while!
Today I decided to do more "from scrach" stuff.
There was this fabulous discount in shredded coconut at our supermarket, that was impossible to ignore.
So it was time to make my own coconut milk and of course also butter.
So, if you have a Bimby or Thermomix, or any food processor, these tasks are all quite simple.
Put 250g of shredded coconut in your Bimby and blitzed on vel. 7 for a couple of minutes until you have a paste.
Pour 2 cups of hot water, mix to blend everything and let it cool down.
I used a cheese cloth to separate the milk from the litlle coconut pieces. Drain very well and you're done with your coconut milk.
For the butter you just have to put 250g of shredded coconut in your Bimby and beat until a buttery consistency, in vel 6. And that's it! Really easy!
I didin't add sugar nor vanilla to my milk because I was not drinking it, but you can if you wish.
With all this milk and butter I decided to make lime and coconut ice cream and coconut bread.
Delicious!
